recover items from recover deleted items file after expiration

When I go into tools to recover deleted items after the deleted items folder
has been cleared there are a list of files but only includes items deleted in
the last few weeks. How can I get an item that was deleted previous to the
dates covered?

The deleted item retention period is set on the Exchange server. This
function is usually set for a specific period of time (I'm not sure what the
default is, I have my server set to hold deleted items for 30 days but I had
to change that from 7 days).
Once an item disappears out of deleted item recovery, it's gone.

Thanks for your reply - I thought this was the case but maybe if specific
period of time changed it may bring back items deleted previously
