You can't automatically time stamp them but you can customize the
toolbars and add the buttons to insert time or date stamps into the text.
Then it is just one click away.

Press ALT+SHIFT+F at the beginning of each entry.

Otherwise you might consider using Outlook's Journal instead - it'll
time/date stamp automatically and can even run a timer if you want.

It would be nice if OneNote could do this automatically, and give the option
to have the timestamp displayed as part of the text or hidden as metadata as
part of the paragraph ("created" and "last modified" fields).

It partially does what you want.
Right-click on the paragraph handle to see the creation timestamp.

OneNote does this (SP1): hover over a paragraph(=OE) to show its handle,
right click on the hanlde - see the "created on" and "created by" at the top
of the menu. BTW, they are clickable - if you click on the item - the line
will be inserted above the paragraph. Works for multiselection too.

You mention inserting date OR time stamps. All I can get is a date AND time
stamp inserted. Is there an option for inserting only the date?

Not natively, no. There are a number of third party utilities that will
capture the current date and/or time to the clipboard and let you paste
from there.

Ack. <slaps forehead> I totally forgot that there actually is a way to do
date or time. ALT+SHIFT+D and ALT+SHIFT+T if I recall correctly.

I guess I'm getting old. Where's my Ginko Biloba? :)

I totally agree with this - it would make OneNote much more valuable
