How do I create a new set of Heading styles in a template

I have created Heading 1-4 as per instructions found on Shauna Kelly's website. They all work great and I get a TOC, great.

But users being users, they want to have the main part of a document using the default headings that appear in the TOC, then they want an Appendix heading also in the TOC which I did by inserting a Caption and linking to level 1
BUT they want to now have a set of headings for text in the Appendix that does not appear in the TOC, I am really struggling trying to create a new set, I keep losing the numbering from the default headings, and I'm not sure what levels I should specifiy under the Paragraph option or what I enter into the numbering option

Please help I'm desperate

If you want to use the built-in headings, you could use Headings 5-9 for
your Appendix. (You can format them to look like Headings 1-4.) Tell your
TOC to not include these headings.
