How do I make multiple booklets out of a large document

We have 800 pages in a Word document, and need to make it into 200 four-page
booklets. The finished size of the folded booklet will be 8 1/2x11. How do I
do that?

If you actually have a printer that can handle 11 x 17 paper, convert
it to a pdf, open it in Reader, go to the "Booklet" option under
Multiple Pages, and Print pp. 1-200, 201-400, etc.

Select 11 x 17 paper, landscape, then "Book fold" and choose "4 sheets per
booklet."

Oh -- I read it as 4 200-page booklets. But, depending on what "sheet"
means here, won't that give you 16-page booklets? (In printing, a
"sheet" is the piece of paper that has multiple pages printed on it.)
