missing to field

I have Outlook 2003.

When I open any email in my inbox (or any other folder) it shows who
it is from and it USED to show the "To:" field and list any and all
people the email was sent to - but for some reason it is now gone.

If I do a "reply to all" all the recipients will be listed in the
"To:" field in the new email.

How do I get it to display the "To:" field when I OPEN an email?

Where are you looking and what do you mean by "open"?
This could mean that you click it to view in the Reading Pane or double
click it to actually open it in a separate window.
