In my opinion, you're making a mistake. If you ever need to access your
Outlook data from off-site, you will not be able to. Moreover you may (or
may not, I don't know) be violating your corporate mail policies by removing
your mail from Exchange. That's something you should ask. Additionally,
others who wish to include you in meeting invitations will not be able to
see your calendar availability if you move your delivery location. Finally,
you will be solely responsible for backing up your Outlook data. If
something were to happen to it, there's a significant chance you could lose
some or all of your data.

That said, there are two things you can do. Both start with you creating a
Personal Folders file (PST). You didn't state your Outlook version, so I
can't be specific. Click File>New>Outlook Data File (or Personal Folders
File) and follow the prompts to create the PST.

Once your PST has been created, you have a couple of choices. The first is
that you can make the new PST your delivery location. This redirect
everything from Exchange to the local PST. I believe it will also move all
existing data from the Exchange mailbox to the corresponding folders in the
PST, but you'll forgive me if I don't try that out with my own account to
make sure. From then on, everything you do will use your PST as the data
store.

The other alternative is for you to leave your delivery location as the
Exchange mailbox, but just move what you want manually or via rules to
appropriate folders in the PST. Once things are in yoru PST as you want
them, rules can move subsequent mail items to the PST automatically. You'll
still have to maniputate data manually for non-mail folders. For example,
adding a contact will add it to your Exchange-based Contacts folder, since
that would still be your delivery location. You can then move it to the PST
or leave it where it is and have your PST keep only the mail items.
