One of my customers email does not get through. After turning on logging and
viewing the log, here is the results (domain changed to protect privacy)

2008.02.01 09:09:25 SMTP (mail.domain.com): [tx] MAIL FROM: <*****>
2008.02.01 09:09:25 SMTP (mail.domain.com): <rx> 250 OK
2008.02.01 09:09:25 SMTP (mail.domain.com): [tx] RCPT TO: <*****>

When I view the POP3 email account settings in Outlook, the values are
correct, but in the log they are not being transmitted correctly.

Is there a registry key I should check to see if the values are being
dropped, reset or whatever, to figure out what would be causing this?

[A Google search reveals nothing, but I think it is because of the asterisk
being in a search term]

This looks OK to me, as far as it goes. Outlook replaces addresses with
asterisks in the log for some of the entries. The only thing I'd consider
wrong is if this is ALL that's in your log.
