password protect outgoing mail attachments

[Sammy work]

I send out word + excel documents to tradesman specifying job details and
costs. I've found at that they have been editing there own workloads!
Is there any way that I can default a password to protect each outgoing
attachment? Without individually passwording each document upon saving.

Advice would be greatly appreciated.

That is not up to Outlook but to the application that handles/creates the
documents.

You can convert the documents to a PDF file which can't be altered but this
is not related to Outlook in any way.
