Specify envelope sizes

Winthin Pub 2007:
Getting Started task pane - Envelopes - On the right side, choose your
envelope size

Within Pub 2010:
File tab - New - Envelopes - scroll down to blank sizes

Are you using 2007? If you are using a custom size envelope you will need to
setup your printer first for the custom size. After that is done, File, Page
setup, Advanced on the right. Select envelope, Type the dimensions you specified
in the custom page setup.
When it is time to print you may have to change the one page option again. There
is a print preview on the print screen.
