I was wondering if there was a way I could change it so i just press the f7 key to have the spelling and grammar tool pop up.

The default keystroke for Spelling & Grammar is F7 - although it's possible
that OS X preempts that key for Exposè in Tiger. If so you still have at
least 2 options:

Alter or disable the assignment of F7 in System Prefs, or

Assign a different stroke to check spelling in Word. (There is a 2nd stroke
already assigned in addition to F7: Command+Option+L

If these options aren't working for you provide a complete description of
what is happening & include exact OS X & Office version info.

Even better why doesn't Microsoft put spell checker and grammar check in the tool bar, after all this is WORD?

I have no idea why the Spell Check button was omitted form the Standard
Toolbar in this version - you'd have to ask MS about that. However, the
button can be added to that bar or as many others as you wish by way of
View> Customize Toolbars & Menus.
