Changing language region in Word 2007 Templates

Hi,
I am struggling to sort this simple issue.
I need to update existing WORD templates for the company. Everytime I change
the language region (to ensure our countries spelling in used) I go back into
the template afterwards only to find that the language has defaulted back to
US!! My regional settings on my computer are set to NZ as default. Please can
you advise...this is becoming increasingly frustrating and my deadline is
looming!!

To explain a bit more...I highlight the entire document first and change the
region...then save.
