Enterprise Custome fields

I am using some mpp files that were created using Project 2007 and Project
Server 2003. These files have used enterprise custom fields such as Location,
Project Exposure, etc. Were these fields and values available by default in
Project Server 2003? Where can I get the required values to re-create all
these enterprise custom fields in Proejct Server 2007?

Sorry, my files were created using Project 2003 and Project Server 2003.

There were no default fields in PS2003. If you open the Enterprise Global in
your 2003 system, you will be able to find out all the values for your custom
fields.

I have another issue now. These old files carry a lot of custom fields with
them that I do not require now. Is there any way I can remove them? I tried
using the organizer and checked the enterprise global as well. I could not
remove the custom fields from the old mpp files.
