Fillable Form

I have created a fillable form in Word 2003 and have those fields protected
(can not change). However, I have been asked if the text that is to be
filled in from time to time ever be highlighted or bolded or italized? Help?

In a protected form, you cannot change the formatting. What you can do is
unprotect the form, add the desired formatting, and then reprotect.

Alternatively, add a section that you leave unprotected; there users can
format text (more) freely.

The intended function of a form is for gathering data rather than
restricting user input and as such formatting is largely irrelevant. If a
form is intended for some other purpose then it is probably not the best
tool for the job. You might consider userforms and free text editing
