How do I convert a color chart and/or table into grayscale?

In Microsoft Powerpoint 2003, I was able to right click on the tables
and charts at which point, the grayscale menu came up. It allowed me
to convert it to inverse grayscale or any of the other grayscale
functions. Now I have 2007 and that menu exists but it's whited out. I
can't do anything.
