No Journal entries being recorded...

My Journal does not seem to be recording anything in Outlook 2007.
I notice that in "Journal Options" there are three lists. I have checked
every entry in the "Automatically record these items:" as well each entry in
"Also record files from:". However in the "For these contacts:" I cannot see
where I can select any of my domain users, only my personal Contacts list
entries. How can I get the Journal to record entries when I have say a task
request against a domain user when they are not listed?

Of note, I am not seeing any Journal entries from Excel, Project, Word etc.
