Rules for calendar appointments a la Outlook and viewing previous e-mail message

Hello All Entourage Gurus,

After a about 5 million years as a PC user I decide to give Mac a try.
Using Entourage has been a bit of an, um, adventure. Here is my 2,
hopefully, easy-to-answer question:

1. In Outlook one can easily create rule for labeling calendar
appointments such that "If appointment includes the word "george" give
it label "check label color". There is no need to write a script to do
this.

But I have yet to figure out how to do this in Entourage.

I really need to have my calendar color coded so I can at a glance see
who is doing which activities and I really don't want to have to
remember to assign a category to each appointment as I make it. As in
Outlook the program shoudl just know that if "George" is in the
appointment's subject line, it gets label, say, green.

2. I want to pound through my inbox starting with the most recently
received message (read, respond, delete, open next most recent
message, read, respond, delete, etc moving back in time). I believe
this is Outlook's default behavior. Right now in Entourage after I
delete the message I've just read, Entourage opens the "next" message
(that is to say the message that is above) so I keep getting popped
back to a message I've already read!
