Why is my text dissappearing if adding text mid-sentence?

What do you mean it is disappearing? What are you doing? What do you expect
to happen? What is happening instead?

May be your Insert option is on, check the lower right corner in Word for
Ins, press the inset button on your keyboard to disable.

I totaly agree with Charles, a better explanation in the body of the message
will make things much easier.

Press the Insert key once to toggle from Overtype mode (which you're in)
back to Insert mode.
