xp ms-word 2002: add russian and greek characters to the symbols table

On my XP machine, I need to add every Russian and every Greek
character to the symbols table such that when I select Insert ->
Symbols from the toolbar, I can insert any of these characters, one by
one, into my doc.

For me, it doesn't work to hot-key switch among English/French/Russian
so that keystrokes get mapped as I type because I don't know the
mapping from keys to foreign-language characters (what key do I strike
to generate upper-case psi, for example?).

I see nothing under Help to do what I want on this XP machine. On my
W2K machine, the foreign-language characters are already present in
the symbols table.

So: How can I add Greek and Russian characters to the symbols table?
