A rule for SENT messages?

I'd like to have a RULE run so that when I reply to someone, the message I
replied with is THEN, via the RULE, put into the folder I've created for
that person. Can I do this? Thanks.

Yes, quite easily.

In the Rules dialog, click on the 'outgoing' tab, then create you r rul ein
there:

If [to:] contains [a_Name]
Then
Move message to [some_folder]
