Access 2007 Graphing Difficulties

All,

I'm having issues graphing in Access 2007. I work for a manufacturing
plant and I'm doing a project dealing w/ quality data. I have 36,000
lines of data, so I'm using Access to handle all of it. I've now got
the table correct, but am trying to use Pivot Table and Pivot Chart to
analyze the data.

PivotChart - how do I add labels to a bar graph so as to display the
number the bar represents (ex - so instead of guessing that looks like
8000, it should display 8052)?

PivotTable - how do I sort this data? All it lets me sort by is
Ascending or Descending. Isn't this just alphabetical / sorting by
characters?
