Actual Work vs Work

Hi,

I have set up a very simple gantt chart. It is comprised of all top level
tasks, with start, finish, work, actual work and % work complete.

I do not want to set up any resources, as in our company it is next to
impossible and not necessary.

When I fill in the Work (saying that the job SHOULD take 1000 hours) then
update the actual hours, it is fine until the actual goes beyond the work
(ie. 1100 hrs). I would like the work to show as an estimate, therefore it
is known when the actual is over. It can still show either 100% or higher,
but I would like to somehow know what the original estimate was.

I can figure out how to do this when customizing the formulas although then
it does not fill in progress on the bar.

Is this possible?

Any help would be greatly appreciated.

Use a baseline and compare the original work from the baseline with the
actual work.

I have never used a baseline before so I am wondering if it would work on a
project where I continuously add tasks to. (ie. each line represents a
different piece of equipment we are building and I add more as they come
along, therefore each estimate may be different from the previous).
