Adding signature or "sign-off"

I'm new to Entourage; I used "mail" previously. How do I add my
signature (ie, name, company, address, etc.) that will automatically
appear on every email?

Create your signature at Tools > Signatures

You can then make it your default signature at Tools > Accounts > (Your
Account) > Options > Default signature
