adding source code to new messages

does anyone know how to add (paste) source to a new message in
Entourage?

I know Outlook Express has that EDIT tab, but can't find anything
compatible now.

I'm guessing you mean HTML source code and are referring to the Edit tab on
the Windows platform. There's no way to directly edit the HTML code in
Entourage messages. A workaround using Paul Berkowitz's "Send Complex HTML"
script is described on the Entourage Help Page:
