I use (and like) SpamSieve. It uses a Bayesian technique to learn and adapt
to spam and works well with a number of e-mail apps, including Entourage.

Great software (I recently got a license). This type of sofware requires
that you "train it" with spam though so it might take a little while to
get at the top of its efficiency.
(hopefully, I had a folder with about 360 spam to train it :->>>).

I swear by spamcop.net as a premiminary filter (and great webmail client
with POP3 and IMAP4 support) and then use the script from RailHead to report
spam that I find...
