Apostrophe's causing a problem in outgoing messages

Help please.

Recipients of my messages are seeing several junk
characters instead of apostrophe's in my messages, and are
being prompted to download a Japanese character set to
read my mail.
Does anyone have any ideas how to stop it doing this? (The
Japanese is a red herring. There are no Japanese
characters on my PC)
