Audio Automatically Plays When E-Mail Opens

Is there a way that the audio and/or video you insert/attach to an
e-mail can automatically start playing when the receiver of the e-mail
opens the e-mail.

Not sure if this can happen.

If it's an HTML-encoded e-mail, perhaps you could include a piece of
JavaScript code that triggers the sound you want.

It probably depends on the mail client, but in general I'd say no. Doing
things automatically when something is opened can be a big security risk so
most mail clients (including Entourage) don't do it.
