How do I do an 'auto reply' so that when I receive an email, it will
automatically reply to the sender telling them that I am out of the office?

But, pay particular attention to the bit about making sure mailing lists and
newsgroups are excluded!

Actually, by setting the rule up in one of the "Mail" tabs, you ensure that
it doesn't work on downloaded news messages. But, because some groups are
available via news servers and mailing lists, replies sent to mailing lists
might still end up on newsgroups as well.
