Is there a setting where we can set up Entourage to do auto save of open applications.
When typing a long email message, most email tools provide the option to save periodically in draft the open document.
Does this exist here?

No, but if Entourage crashes, it will save an open message. Best to get in
the habit of command-S every so often.
