Is there any reason why my autocomplete seemed to lose all
its previous information, and now autocompletes for some
names and not others? Both of the necessary boxes are
checked in e-mail advanced options

Several. There are a number of changes you could make that might cause
Outlook to start with a new autocompletion cache. Creating a new profile is
the most frequent one.
