Automatic application of junk mail filtering?

Is there any way to make this happen? Or do I always have to trigger it
manually?

If the junk mail filter is on, it happens automatically when you receive
mail.

Well, that's certainly the impression I got, but I am always getting mail
that "seems to be junk" or is this just the first instance of a new address?

What David is describing is for Entourage 2004, where the filter works well
and also scoots the junk mail off to the Junk E-mail folder. In X, the
filter doesn't work as well, and doesn't it move it anywhere - you have to
set up your own Rule for that.

Which version of Entourage?
