How can you stop the signature continuously being inserted at the
bottom of each reply and forward?

I would like for it to appear in new e-mails and thats it.

Unfortunately this is not available in Entourage. The features are very
limited on this program. You could do what I did and disable signature.
You would then have to insert it manually every time you send an email.

This mostly depends on your recipients' email programs, not Entourage. It's
an email protocol - but optional, not compulsory - to use the "-- " line
(**NOTE THE SPACE AFTER THE TWO DASHES!**) as a signature delimiter, and
Entourage supplies that for every New signature. If you removed it, put it
back.

Now email clients - such as Entourage - which honor this protocol will
remove everything below the dashes delimiter if you reply with your reply
preferences as "Place reply text (!!meaning "quoted text") at top of
message" and DON'T check "Place insertion point above quoted text", so your
replies are at the bottom. Entourage will remove the original sender's
signature (whatever is below the dashes) if you do this. IF your
correspondent's email client honors that protocol, his reply will do the
same , removing your signature. But not all email clients honor the
protocol.
