Is there a setting to Automatically delete junk e-mail after a predetermined
number of days?

Yes, it's called AutoArchive. For example, I have Outlook set in Tools | Options | Other | AutoArchive to run archiving every day. And I have my Junk E-mail and Deleted Items folders' archive options set to permanently delete items after 3 days.
