SImply drag the folders to the desktop. This will create
".mbox" archives and that's it. Works with separate emails
as well (creating ".eml" documents), of course.

Yes, you can drag them back later. If your intention is to
find a way to have an archive you can easily check
whenever needed, consider creating a different identity
from the "Entourage" menu and "store" your backed up
folders/messages in that new identity. You can then easily
switch from one identity to another when needed.
I personally have four different "backup identities" for
the past four years.
