Does anyone have a clue as to why, when I wake my computer from sleep,
Entourage tells me it's "connecting to ldap.bigfoot.com"? That is not
a server I have set in any of the preferences.

Entourage ships with several Directory Services for looking up email
addresses. If you don't use this feature, you can safely remove them at
Tools > Accounts > Directory Service.

Entourage 2004 can be configured *not* to check any configured directory
services, so you ought to be able to leave them configured just not searched
by default. (I keep mine configured so I can search it when I want.)

Preferences > Compose > Search directory services when addressing messages

However, Entourage still wants to chat to the server I've got configured,
which is incredibly annoying because it isn't always accessible.

Actually the current version, Entourage 2004, no longer ships with those
defunct LDAP server entries. But if you imported a previous Entourage X or
2001 identity - which did - into 2004 when upgrading, you got them that way.
