I have been trying to force opening attachment with other applications by
dragging the attachment on top of them and I am unable to do it.

Something else I find arcane, I am not able to select all the telephone
numbers in a contact by just clicking on all, I have to shif click on every
name or phone number in order to do this; opposite to Address Book where you
can select all you want at once and do a copy/paste where you need.
The way MS does it takes more time and I can't find a reason why they did it
like this.

In the Finder or the Dock? The latter will work, the former will not.

On the Dock, I have received attachments with bad Excel extension for
instance that I drag to Excel and it won't highlight the application. Same
with some Powerpoint presentations.

I insist Microsoft did a really bad job on this, check out how Mail.app does
it, it's a few years ahead of Entourage. You have the open with..., the open
attachment, the quicklook and you can drag files.

Try holding down the Command (Apple) and Option keys when you drag the
document onto the Dock icon.
