Can I animate just one word in a sentence in a bullet point

No. You can only animate whole paragraphs or whole text boxes.

Common workaround.
Use a textbox with all the fixed text, allow a gap (ie. pile of spaces) for
where the word will go.

Add another textbox contained just that word and place it over the gap. Bit
of fiddling later and you have a word that looks like it fits perfectly into
the paragraph. Now just animate this separate textbox and no-one will be the
wiser.

(PS. has anyone else noticed that the microsoft.com community site doesn't
seem to handle replying to a msg that only has a title? Or maybe it's because
I'm using firefox at present)

It's broken. I've been trying for a year to get it fixed.
