Can I edit or add to the phone fields in Contacts?

"Some of our contacts have more than one office or more than one residence.
Can I add or modify the phone field, for example, from "Business to N.Y.
Office or L.A. Office?

Not without creating a custom Contact form or simply adding new fields that
will show up on the All Fields tab (but not the main tab)...
