can i link a category to a single contact in Outlook?

I have contacts who relate through one staff member only. Is it possible to
link these contacts to the details of that particular person without having
to create another category, per se?

Not sure what type of "link" you need. Can you not use the Contact linking
field in the Contact Record to accomplish what you want?
