Can Notes be organized into folders and subfolders?

I'd like to organize my notes into folders (and possibly subfolders), like
my mail. However, in notes view the File --> New --> Folder, and File -->
New --> Subfolder menu selections are grayed out. I think I see the
handwriting on the wall. Other than assigning categories and creating custom
views, is there any other way of organizing notes? I am aware of the various
freestanding note applications available, and even own one of them. Thanks.

No, categories is it. You could get quite sophisticated using multiple
(secondary) categories and custom views.
