There are several things that could be happening.
Make sure that you have created an role on the SQL Server -
in Analysis Services where the cube resides. Make sure the
Web Access/Project Server account you are using has full
control over the OLAP cube. I would try that first...
After that, I would check my IIS settings to make sure
they are all correct...

OLAP cube. The name of my analysis server was already in
the 'Server Name' field. So I went down and clicked on
the 'Update Now' button and it said 'Could not connect to
the OLAP Server'.
