Can't Change Default Setting in Outlook 2000

I am running Outlook 2000 under Win XP. When I set Outlook it to use Word 2000 as my e-mail editor it defaults to an ivory font color which is essentially invisible. Every time I change the default settings to black they change back to the ivory font color. Do I have to uninstall and reinstall Office 2000 to be able to change my default settings?
