How can I stop Entourage capitalising the first letter of a new
paragraph/sentence. I cannot find how to change this, to me, annoying
default

Auto Correct... in the Tools menu presents this option.

Hi Francis-

Take a look at Tools>AutoCorrect, remove the check that causes the behavior
as well as any other changes you might wish to make, just like in Word.
