I have a user who is using Entourage 10.2.1 with and Exchange 2000 server.
The user was having some issues including emails being sent multiple times.
I decided to reinstall Office. After the reinstall here custom Categories
are gone. I do have a backup of some of the files before the reinstall.

In what file does Entourage keep the Category information? The database, a
plist... ?

The categories are not synched to the exchange server. Every time you
rebuild the database (or move to another machine) they are lost.
I would suggest taking the entire database over to the new Entourage
identity. Be careful though since a simple rebuilt will clear the custom
categories on all Exchange data. Because of that serious limitation, I
decided to move my calendar and address book to the "On my computer".
Another option would be to create an AppleScript that would write the
category information to some section of the address book and calendar
entries (eg: into notes) and another script to read them from there and
re-apply them.
A month ago I had a little bit of time and I wrote the first part of the
script. The second part is a little more complicated and I didn't have
time to work on it at all...
Since I now have the categories writtten in a custom field for my
entries, what I do now is to search for entries with the category I want
mentioned in the notes/custom fields and i batch apply the proper
category setting in the search result window. A bit tedious, but it
works.
