I am having a similar problem. I have Vista running Outlook 2007 using beta
2 of the new Outlook Connector. I am syncing with a MSN premium account.
The problem is that if you modify the "Display As" field in Outlook, the
change is lost as soon as you sync with the server (using Outlook Connector).
If you don't sync to the server, the modification persists perfectly fine in
Outlook (even if you close the contact or, in fact, close the application
completely).
A separate problem is that Outlook contacts fields (e.g. Spouse or Children
fields) are not propogated from the desktop to the server even though it
seems that Windows Live Mail now has those fields (try doing a complete
export to CSV of your Windows Live Mail contacts using a web browser and
you'll see that these fields exist even though there is no web-based UI for
editing/viewing them). Ideally, the fields would be propogated between
desktop and server regardless of whether the web-based UI can view them.

I was asking the steps you are using for creating the Contacts then
changing
the Display As field, what happens when you tab out of the field, and
at
what point exactly the email display as field changes.

Well, SNAP! Yes I am Syncing, but I still don't know what's
changing

I'm using Outlook Connector and syncing with the address book on
MSN,
but
there's no "display as" field on those records. If I make changes
in
Outlook, as soon as I send/receive, they change back to default, but
I
have
plenty of contact records that do hold the change. I have no idea
where
the
change is coming from.

Try clearing any autocompletion entries you have for those
Contacts
who
refuse to change.

I'm using Outlook 2003. When I make changes to email display
as
field,
some
take and some change back to default Full Name (email
address).
I'm
only
using one computer and not syncing with any PDA's or any other
devices.
