Here is one way of doing that:

Dim sOrgPath As String

'Remember the original path
sOrgPath = Options.DefaultFilePath(wdDocumentsPath)
'Set the new path you wish to use
ChangeFileOpenDirectory ("C:\")
With Dialogs(wdDialogFileOpen)
.Show
'Restore original path
ChangeFileOpenDirectory sOrgPath
End With

Within Word, Tools->Options, Files Locations tab. Change the Documents setting.
