changing email addresses or deleting names in pop up window

Operating System: Mac OS X 10.4 (Tiger)
Email Client: pop

When I create a new document and I start to type in a name in the "To" pop up window and various names under that first letter of the person's name will pop up.

HOw do I change or delete addresses in that pop up section. As these names are not in my address book.

It appears that entourage is using this information from memory.
