Changing language for spell check not working?

I have a document that was originally created in a German word, however the language typed is english. The spell check is calling out the english words as if they are spelled wrong in German.

So I've set proofing language as English but it is still giving the same.

If I right click a word and then see more, it will allow me to set the english dictionary, but only on one word.

Whats the best way to change this to English and make it stick?

I think I have solved it, I have selected all and then changed the proofing setting. Hopefully this works while continuing to edit the document
