Changing Reply to Address

You can do this, but it's account-specific, which means that every email
going out from that account will have the same reply to address. In order to
achieve this, go to Tools>Accounts, select your account, switch to the
Options tab and in the Additional headers field, enter "Reply-To" (no
quotation marks) in the left field and the desired email address in the
right field.

If you only want to have this reply to header for some messages, then you
should consider creating a different account which you'd use only for that
purpose. To do that, create a new account, enter your existing account
specifications (APART from the incoming server; leave that one blank) and
specify the reply to header. You could name that account "Reply to", and use
it only when you need someone to reply to your other email account.
