Changing the Subject Line

I recently moved from PC to Mac and one of the things I loved about
Outlook on the PC was that you could change the subject line of
received emails to something meaningful (such as order date and invoice
number) that way I could always find what I was looking for quickly. I
cannot find any similar functionality in Entourage. Any suggestions??

It's not that obvious, but it can be done. You'll have to open a message in
a new window (double-click the message in the message list, or select it and
hit Return), then select Message>Edit Message.

I opened the message but the "edit message" option under the "message"
menu is greyed out... I am connecting to my corporate exchange server,
does that have something to do with it?

Yes, I believe that editing messages is only supported with messages saved
locally (under "Folders on My Computer"). I think that some versions of
Entourage have that option available for working with "online" accounts
(Exchange, IMAP, Hotmail), but in that case, editing the message really only
edits the local copy, not the original message on the server.
