Clicking on email address opens Mail

I'm a relatively new user of Mac and Entourage. When I click on an email
address within a message (to write to that person), the Mail program opens.
What I want is for a new window in Entourage to open so that I can write
from within Entourage. How can I change this behaviour? Where's the setting
to do this?

Thanks,
Sarah

This means your default mail application is Apple's "Mail".
If you are using Jaguar (Mac OS X 10.2.x) you can change
the setting in the "Internet" System Preference Pane.

If you are using Panther (Mac OS X 10.3.x) things are a
bit different, the equivalent setting has to be found in
Apple's "Mail" somewhere (I guess in the "preferences")

That's precisely it. I was upgraded to Panther and can't find the equivalent
to the Jaguar "Internet System Preference Pane." The preferences for Mail
relate only to Composing, there's nothing else there. Entourage also has no
such item--changing default mail program--in its preferences. Where is this
located in Jaguar? Does anyone know?

I'm sure ther must be something in the prefs (I don't have Panther). But
here's a better answer : IC-switch. A free app to help you out:

Open the Mail app. Go to Mail > Preferences and click on the General tab
(it probably opens right to that tab). Then set Entourage as the Default
Email Reader. That will do the same thing as the Internet system pref did
in Jaguar.
